Method
- Bring a saucepan of water to the boil. Use enough to cover the eggs.
- Turn it down so it bubbles gently, then lower the eggs in one at a time on a spoon.
- Set a timer: 7 minutes for a soft, jammy yolk, 10 minutes for hard-boiled.
- Lift the eggs straight into the cold water for 5 minutes. It stops the cooking and makes them easier to peel.
Tip
Older eggs peel more easily than really fresh ones.
Swaps
Sprinkle with salt, pepper or a pinch of smoked paprika.
Storing it
Hard-boiled eggs keep in their shells in the fridge for up to 5 days. Once peeled, eat within 2 days.
Air fryer
No water needed. Put the eggs straight into the basket at 160°C. 10 to 11 minutes for soft yolks, 14 to 15 minutes for hard. Then into cold water as in step 4.
Air fryers vary, so check early the first time.
