You'll need

  • Don't have it?
    • Mascarpone: Same weight. Richer, and works for cheesecake too.
    • Full-fat Greek yoghurt: For dips and pâté only: same weight, a bit tangier and runnier. Not for cheesecake, it won't set.
  • Don't have it?
    • Ground hazelnuts: Same weight, same way. Lovely with chocolate.
  • Don't have it?
    • Granulated only: Fine in anything that's cooked. For cold puddings, whizz it in a clean blender for 30 seconds so it isn't gritty.
    • Xylitol: Works the same for people, but it's very poisonous to dogs. If you've got a dog, don't keep it in the house.
  • Don't have it?
    • Vanilla extract: A few drops instead. Different, but just as nice.
  • Don't have it?
    • Olive oil: For frying and roasting, use 1 tbsp oil for each 15g butter. Not for baking or the cheesecake base.
  • Don't have it?
    • Frozen berries: Same weight. Thaw them first if they're going on top.
  • Don't have it?
    • Whipping cream: Works in sauces and puddings. It's a little thinner, so sauces take a minute longer to thicken. It won't whip as firm.
    • Full-fat cream cheese: For sauces only: use half as much cream cheese and loosen it with a splash of water. Not for puddings.

Method

  1. Put the eggs, cream cheese, ground almonds, sweetener and cinnamon in a jug and whisk (or blend) until smooth. Leave it for 2 minutes to thicken slightly.
  2. Heat a non-stick frying pan on a medium-low heat and add a little butter.
  3. Pour in enough batter for a pancake about the size of a saucer.
  4. Cook for about 2 minutes until the top looks set, then flip carefully with a thin spatula and cook for 1 minute more.
  5. Repeat with the rest of the batter, adding a little butter each time. It makes about 6.
  6. Serve warm with the berries and a spoon of cream.
Tip

Keep them small and the heat low. They're softer than flour pancakes and easier to flip small.

Swaps
  • Vanilla extract instead of cinnamon.
  • A squeeze of lemon and a sprinkle of sweetener instead of berries, like Pancake Day.
Storing it

Best warm. Cooked pancakes keep covered in the fridge for up to 2 days. Warm them in a dry pan.
